Disney on Ice

We took Jessie to Disney on Ice at the Thomas and Mack on 4/27/13.
 We had really good seats.
Jessie did really well and sat pretty still through the whole show!
We got some popcorn and a light up toy, of course.
After the show we took Jessie to The Olive Garden.
Pasta is her favorite and I knew she would eat well.
And she did!
We had a really fun family day!

Ahhhhmazing White Texas Sheet Cake

This cake is so so good.
The whole family will love it. Mine does!
WHITE TEXAS SHEET CAKE
Recipe from: All Recipes.com I got it from: here
  • 1 cup Butter
  • 1 cup Water
  • 2 cups All-Purpose Flour
  • 2 cups Sugar (white granulated)
  • 2 Eggs, beaten
  • 1/2 cup Sour Cream
  • 1 tsp Almond Extract
  • 1 tsp Baking Soda
  • 1 tsp Salt
FROSTING:
  • 1/2 cup Butter
  • 1/4 cup Milk
  • 4 1/2 cups Confectioners' Sugar
  • 1/2 tsp Almond Extract
Directions: In a medium saucepan bring butter and water to a boil. Meanwhile, in a large bowl add flour and sugar. Mix. Then add in eggs, sour cream, extract, baking soda and salt. Slowly pour in the boiling butter/water mixture. Stir with a spatula until well combined and smooth. (No need to use an electric mixer!)
Pour into a greased 15-in. x 10-in. x 1-in. baking sheet. Bake at 375 for 20-22 minutes or until golden brown. Cool for about 20 minutes.
FOR FROSTING: In a large saucepan, combine butter and milk. Bring to a boil. Remove from the heat, and then stir in sugar and extract. Stir until smooth and all combined. Spread over warm cake. Decorate cake with sprinkles, if desired.
I usually put way too much sprinkles. Yummo.

Swimming

On 4/26/13 Jessie had her first swim in Papa and Grammy Lee's pool!
It was kind of chilly but Jessie still had a lot of fun!
We will be swimming a lot this summer!

CC FAIR

Every year the Clark County Fair comes to our little town.
It's a lot of fun and we eat way to many greasy foods.
We were so excited this year because Jessie would be able to ride the little kiddie rides. Wrong. She could only ride the merry go round and the ferris wheel.
She went on the merry go round once with daddy and once with papa Lee.
She loved it and cried when she had to get off.
She loved milking the cow with Papa Hardy at the Farm Bureau booth.
She would cut every kid in line and being the spoiled only grandchild she is.... Papa let her do it.
Jessie got her face painted and held very still for the mean lady to do it. Jessie's little hands can't hold still and so while we were setting in the chair waiting for the girl in front of us to be done her little fingers started reaching for the make up. Until the lady snapped at her. She held still after that.
The closest thing to a horse was a unicorn. It works.
 Oh. I love these pictures.
We've made it a little tradition to get Jessie a little hat at the fair each year.
So cute.
 *Favorite*
We even let her ride the little ponies.. Twice.
She liked it. For a few minutes.
She kept saying.. " Help Me".. "Help Me".. "Help me Derek"..
I met up with a couple of friends from high school, Hannah and Bailey, on Saturday night and we chatted and chatted! It had been way to long and it was so good to see and visit with them!
Until next year CC Fair!

Tomatoes are planted!

We love home grown tomatoes!
It's a must to plant. We knew that we would be moving but we planted them at our old house anyway. Good thing it's still in the family so we can go water and eat them.

I don't think she wanted her picture being taken.
Oh and she loves Justin & Missy's goats. Looooves.
Bring on the BLT's! Yum.

Love Letter #1

Dear Jessie- You are so cute! I know I'm you're mother but I seriously can't get enough of you're big blue eyes. You have been so much fun lately and have been talking so much! It seriously happened over night. I loved practicing all the words you know. Some of them include: Momma, Dadda, Papa, Mamma, Wade, Derek, Hannah, Betsy, Uncle, Kiki, Brooke, Horse, Justin, Missy, Truck, Car, Puppy, Kitty, ROAR! and so so much more. We have been trying to work on peoples names. You are doing so good and surprise me each day with new words. I loved playing hide-and-seek with you and Daddy tonight. We were so sneaky and Daddy could never find us!;) I have loved doing you're hair lately. It's getting so long and we are able to do fun things with it, even if you are wiggling all over the place while trying to do it. I love that you are totally in love with The Lion King. When I put you in bed tonight I could hear you roaring with the movie while I was in my room. Daddy and I can't wait to take you to the fair this weekend to take you on rides and see the piggies and get an ice cream cone!

Dear Cody- Thank you for being so nice and hanging all the pictures and decor on the walls. You are so sweet. I'm glad you liked dinner tonight. Even though it was kinda crunchy cause we ran out of foil. You never complain. I love watching you play with Jessie. She is so in love with you and I can't blame her. She loves when you come home from work. It's our favorite part of the day. Can't wait to spend the weekend with you and J.

Dear New House- Oh! You are so cute. I'm so glad that we have finally been able to move in. You are looking better by the day. I have kinda felt like I have been staying in a hotel but it's been nice.
