The Big 2-1.

That's right.. I'm LEGAL!
I turned 21 yesterday.
 
I have such fun birthday memories of when I was growing up.
My parents always spoiled me and I had the coolest parties/coolest gifts.
 
So when it's my birthday I have high expectations.
Ya know.. Like I should be carried like a goddess by attractive men down Moapa Valley Blvd.
Just kidding.
Or maybe not.
 
Cody made me my favorite breakfast.. WAFFLES!
And we went to my mom's and she and my dad made me dinner.. NAVAJO TACOS! I love my parents cooking.
And of course my mom knows the way to my heart with costco cake.
 
My baby brother's birthday is the 24th so we had lots of birthday fun!!
I even got to catch up with my best friend from high school who I haven't seen since my wedding.
 
*Cody & Jessie got me running shoe's and yoga pants. Oh, and a card with my "boyfriends" on it.
*My awesome parents got me and outfit from BUCKLE. Sawheet. I love it.
*My Sissy got me some bath and body works.:)Mmm-mm.
*My bro gave me $40 cash money. Cha-Ching!
*My sweet in-laws got me a cute calendar magnet board. I can't wait to hang it up!
 
I had a great birthday!!!!

JW Marriott..

We wanted to do something this summer, we thought and thought and came up with pretty much nothing.
So a few weeks ago I booked us a room at the lovely JW Marriott in Vegas for 2 nights. We called this our 'Birthday's Getaway.'
 I didn't get many pictures. I thought about taking pictures, but just didn't want to even bother with it.
We just swam did some shopping and relaxed.
It was nice.
 Jessie hates to be carried around. So it took us awhile to get to places because her little legs don't go too fast.
I think she had fun, but was ready to come home to her bed. She loves her bed!!
It was good to get out of town. Even if it was just to Vegas.
 
Next.. I hope it's Disneyland.. Sigh....... Nothing compares to Disney.

LoVe..

What am I loving??

*That I can lay in bed and watch the lightening pretty much like every night. It's relaxing and gives me time to think about life.

*That Cody is chasing Jessie around saying "Ca-Ca". She found his dirty socks in the hamper.

*That the Pretty Little Liars Finale is a week from tomorrow. Who do you think is the betrAyal?? I've got no clue.

*That this week is not supposed to be blistering hot. Yay for Cody!

*That they gave me a team teacher in primary. I will only have to teach every other week. Hallelujah! Those kids make me crazy, and I will be able to go to Sunday School and Relief Society.

*That Jessie is sleeping 12 hours a night. Those new born nights were hard. Now I can sleep sleep sleep. And I have even found myself waking her up because I'm bored.

*That we are going on a mini vacay on Wednesday. My birthday is this weekend and Cody's is next month. I booked us a room at a resort in Vegas so we are going to take Jessie down and swim and have some family fun!

Fishin'..

Jessie got a fishing pole for her birthday so we have been wanting to take her fishing.
The thought of taking her to the lake gives me very bad anxiety so we decided to take her to the 'Res'. Still gives me anxiety but not as bad as crusin' on a boat.
Tonight the weather was nice so we loaded up the rhino with our fishing poles and went!
 Jessie wears her sunglasses outside. It's so funny, but she looks adorable!!

 At one point she was in the water and slipped and went under.
She didn't like it. I think it scared her cause she didn't want much to do with the water after that. (Which was fine by me!)

 We didn't catch a single fish! But we did have fun and got out of the house! I love the simple things we do that are so fun and memorable.
Jessie LOVES the rhino. She was wanting to set in the rhino instead of play in the mud/water. So I told Cody to leave me and see if she even cared. Bad idea. I was hoping she would get upset and want me to come too. Nope, she just waved Bye-Bye. Little turd.

On another note.. I am LOVING being home. I feel like I have time to enjoy time. On my days off previously I felt like I had so much to do (laundry, cleaning, all my shows on the DVR, ect.) that I couldn't just set and enjoy my time with Jessie. I always felt so busy!
That has all changed. We.do.whatever.we.want.when.we.want. And it's AMAZING!
We haven't even gotten too bored.
I have gotten all my scrapbook stuff. I'm only a year behind on Jessie's book! So I've been doing that and it's been fun.
Another thing I have enjoyed is pinterest. I have had one for awhile but never really looked at it.
I'm now looking at it 2 or so times a day playing around looking at recipes and crafts. Gahh.

Red and White Pasta..

I had a lot of fun posting a recipe so I decided to do another one!!
This is one of my favs. It's yummy, fast, cheap, and meatless!

Below are all the ingredients that you will need.. So easy!!
Red and White Pasta
8 Servings

1 pound box Penne Pasta
    1 (26 oz) jar meatless Spaghetti Sauce
  • 1 (16 oz) jar Alfredo Sauce
  • 3 cups shredded Mozzerella Cheese
Directions: Preheat oven to 375 degrees. Boil and cook pasta in a large pot of water according to package directions. Drain.
In a 9x13 glass baking dish, spread 1/2 cup of spaghetti sauce on bottom. Pour half of the cooked pasta on top. Pour half the alfredo sauce, half the spaghetti sauce and 1 cup of cheese evenly over pasta. Repeat with remaining pasta, sauces and cheese. Cover with foil and bake for 30 minutes or until hot & bubbly!

 Here is the first layer of pasta, sauces and cheese.

It goes great with salad and garlic bread.:)

Cheerios Anyone?..

Jessie's new favorite trick is to crawl up onto the chairs and then get on the counter! Waahh.
And she loves to play with the cereal boxes that I have setting there.
 I heard her trying to get the cereal and I even heard her dump some out.
So I go get her and take her back into the living room.
But of course she goes right back for it.
 And before I know it the whole box of cereal is on the floor.
I'm pretty sure while I was cleaning up she ate a few pieces.

Cookin'..

I LOVE to cook. Keep in mind I'm not a great cook, but it is something that I enjoy.
I love to try new recipes and have a few blogs that I follow faithfully.
This recipe is too good not to share.
TOTAL comfort food.

They are both so easy. I prepared them before church so they were pretty much ready when we got home.

Crock Pot Creamy Italian ChickenServes 6

4-6 boneless, skinless chicken breasts
1 packet Good Seasons Italian dressing mix
2 (10 ounce) cans cream of chicken soup
1 (8 ounce) block of cream cheese, cut into cubes
Egg Noodles or Rice, to serve with


Directions: Spray crock pot with non-stick spray. Place the chicken breasts in crock pot, and sprinkle the Italian dressing mix over the tops. Pour the cream of chicken soups over chicken, and then spread the cubes of cream cheese evenly over all.

Cover and cook on low for 6 hours. Remove lid and stir mixture together. Cut chicken into bite-size pieces. (If the sauce seems too thick, you can thin it out with a little milk)

Serve chicken and sauce over cooked egg noodles or rice.

** I usually cut these recipes in half, that would be way to much food for the three of us.



3 Ingredient Parmesan Rolls Recipe:
 (Serves 8, adjust accordingly)

8 rise and bake frozen rolls (like Rhodes)
1/4 c. butter (1/2 stick)
1/2 c. grated Parmesan cheese (fresh or canned)

Place butter in a microwave safe dish and heat until completely melted. Place grated Parmesan in a separate dish. Dip each frozen roll completely in butter then roll in grated Parmesan until covered.

Place rolls on a greased pan and allow to rise until doubled (follow directions of package). Bake according to package directions until rolls are golden on top.
 
 
Seriously.. So good. TRY IT!:)

One year pics and stay at home Momma..

We got Jessie's pictures done and I totally LOVE them.
She is such a sweet/crazy girl.
 This one is my FAVORITE. Totally Jessie.
 One minute she's pulling out my hair and slapping my face and the next she's giving kisses and hugs.



I am now staying home permanently with Jessie. I'm so excited to spend my days with here and I'm so blessed to be able to do it.
I was so over my job and the people that I work for. Coming home from work feeling depressed and worthless is not worth it. And getting yelled at is not fun so I was outta there!!!!!!!

And why is Jessie getting so big?! It's seriously depressing. I just want to crawl in bed and cry for a bit then go on a date with Ben & Jerry. She is getting so big and smart. It makes me feel like life is going way to fast and before I know it, it's gunna be over. SAD. That is seriously not a comforting thought. I think I might need a second date with Ben & Jerry.
Why do kids have to grow up? Can't I just keep her little forever?
