Easy Beef Stroganoff

There is something I love about those easy comfort food meals,
especially on a rainy chilly day!

What your gunna need:
8 oz extra wide egg noodles
1 lb ground beef (I used lean)
1/2 cup chopped onion
1 clove garlic, minced
1/2 tsp salt
1/2 tsp pepper
1 cup beef broth
8 oz container of sour cream (I used low fat)
1 (10 3/4 oz) can of cream of mushroom soup (I used low fat)
2 tsp dried parsley
 
Start by cooking your noodles according to directions on the package. When they are done drain and put back into pot with a lid so they won't dry out.
While the noodles are boiling start browning the hamburger in a large skillet over a medium high heat. When the hamburger is fully cooked add the onion and garlic, stir. Then add the beef broth. Bring to a slight boil, then reduce heat and let simmer for 5-8 minutes.
After the mixture has simmered add cream of mushroom soup and sour cream. Keep the temperature to a medium high heat. Stir often and bring to a slight boil. When mixture is heated through stir in the dried parsley.
Serve over warm egg noodles.
Went great with salad but would be great with canned a veggie too.
 While I cook, they play!
 This recipe was super yummy and Cody loved it!
If feeding a small family I would definitely half the recipe.
I had a lot of left overs!

Fort Fun

A couple weeks ago we made Jessie a fort!
She thought it was pretty cool!
 Don't mind her messy hair and soggy diaper.
 Did I mention we love lazy day weekends?
I spent all day Monday cleaning up the house,
It was super nice to not worry about it over the weekend.

UNLV Game

Cody LOVES the Runnin' Rebels.
When he got tickets for Christmas from his lovely Sister Hannah for Christmas he was pretty excited!
I told him he should take someone who would really enjoy it and have fun,
buuut he insisted I go with him.
I'm really glad I did.
He even promised I could pick where we ate.
I told him I wanted the Cheesecake factory..
Let's be real..... Who doesn't love it?!
Long story short..
We got lost and just decided to go to P.F Changs.
It was ok. Other than we haven't been there recently and forgot how you are able to share plates.
Cody got noodles.
I got rice.

Playing outside..

The weather here has been so nice!
(Well aside from this past weekend, it was cold!)
 Jessie and I have taken advantage of it!
On the day I took these pictures it was pretty warm!
We didn't even wear shoes!
 We even went to the park last week.
And we try to go on a walk everyday!
I love walking. It seriously is great!
 She got pretty sick of my trying to get some good pictures of her!
Jessie has been teething so she has been super grouchy.
Those mollars are a pain!!
And.... We are both sick. AGAIN! I woke up sunday with a super sore throat. And then the cough came and Jessie has the same.
That makes like seriously 4 colds over the past couple of months.
 
Jessie loves toy story. She will set and watch the whole movie. 1,2, and 3.
It's really helpful when i'm trying to get stuff done.
And lately she has really been liking Tangled. She loves the 'pincess', as she would say.

Emotions..

I am happy because..
It's almost time for Cody to come home, Mondays suck!
We are having meatloaf for dinner.
Jessie is back to sleeping in her bed and not with Cody and I.
The weather has been so nice.
I am in a reading mood.
The bachelor is on two nights this week.

I am sad because..
Jessie is getting way too big.
Summer is near.
My head has been pounding!

I am weird because..
I love A1 sauce on my mac&cheese.
I love folding laundry.
I really enjoy going grocery shopping.
Vacuum lines on the carpet relaxes me.
I could set in the bath tub every single night.
I would much rather be at home than out and about.
I really enjoyed being pregnant with Jessie.

Cody goes hunting in Texas..

For Christmas my parents got Cody a trip to go to a Ranch down in Texas that my Uncle Ron helps with.
He was super excited because he hasn't done something like this before.
 He had so much fun with my dad, bro, and Chucky.
And he said he would recommend it to anyone and plans on going back again!
 When he told me how he shot this animal and hit it in the wrong spot so it didn't die quick and he went up to it and slit it's throat I pretty much lost it.
That sounds horrible!!
Poor little animal.
I don't mind if Cody hunts, but I won't eat the meat or I won't be going with him!! So not my cup of tea!
I'm glad that he got to go and he had a great time doing something that he loves to do!

Jessie is 19 Months!

I've been MIA due to our internet being down.
It's fixed. Yay.
 
I can't believe Jessie is 19 Months today!!
She is getting so big.
And she is so smart.
 
Last month we had a dr appointment.
Stats:
Weight: 27 pounds 14 ounces
Height: 33 inches tall
 
We only had to get one shot this time and don't have to go back until her 2nd birthday!
 
Jessie is talking to much. It's so funny.
And I keep telling myself to watch my mouth because shes picking stuff up so easily.
She has been a good eater lately and she will pull me to the fridge or the snack cupboard if she is hungry.
She is doing ok with Nursery. She freaks when I leave and sometimes will calm down. I'm hoping she starts to love it and do good playing with other kiddies.
Jessie loves babies and pretties, but she also loves trucks and brooom broooms.
 
I love you my pitty pincess girl!
